If you have yet to become a parsnip fan, here is your chance!! These parsnip fries are a great addition to any meal, and they're super easy to make! Think of them as a cross between a carrot and a potato. I personally used coconut oil instead of butter to roast them. Today's Food Friday is a great meal for the whole family! Using coconut milk in place of a dairy product is a great way to incorporate the creamy taste without being overly inflammatory to the body. To begin with, the cooking times on the recipe are a bit much for the veggies. I like my veggies to still have a bit of crunch and not be over-cooked.
